You could think that eating chocolate would be humorous. After all, ingredients from the cacao plant are typically combined with a ton of refined sugar to make chocolate. Even with its lower refined sugar content, dark chocolate is still not as healthful as it could be. Scientists have therefore been trying to figure out how to replicate the chocolate recipe, and they have now succeeded in doing so.

We refer to the process of converting sections of the cacao plant into a cocoa mass as the method used to make chocolate. The pulp and seeds that are contained inside the cacao plant’s pods make up this mass.

When chocolate is combined with the previously mentioned refined sugar and an abundance of saturated fatty acids from the fruit’s cocoa butter, it forms a snack full of elements that raise the possibility of health problems.

Therefore, researchers headed by experts from ETH Zurich started from scratch to create a healthier chocolate. They made the decision to attempt producing as much chocolate as they could from the cocoa fruit. This would help reduce the amount of refined sugar required to manufacture the snack, making it a healthier substitute for the conventional chocolates that are now available on the market.

They used fruit from the Theobroma cacao tree to do this. They started by roasting and grinding the meaty seeds that were inside the pods after a prolonged fermentation phase. As a result, the seeds and their pulpy outer covering were reduced to a fine paste, which was then utilized to create the chocolate’s cocoa mass base.

The fiber-rich inner wall of the pod, known as the endocarp, was then removed and dried. After that, they ground it into a powder and mixed it with pulp juice to make a sweet gel that they used in place of the refined carbs in conventional chocolate preparations.

By combining all of these ingredients, the researchers claim to have created a healthier chocolate with the ideal ratio of flavor to mouthfeel.
Even more astounding is the fact that the new chocolate had the same sweetness as regular chocolate without using as much refined sugar as is typically called for in recipes. It’s a big step towards producing healthier options that consumers may enjoy for years to come, and maybe in the near future, we’ll see this new chocolate on store shelves.
