Everything lemon is my mother-in-law’s favorite. I’ve been posting a lot of lemon recipes lately, as you may have noticed. This is my attempt to get her to remain home instead of going to the store. Presently, we are providing weekly meals for my mother-in-law and my spouse’s 93-year-old grandmother.
Making food and baked goods for other people has been a huge pleasure. It has forced me to experiment with recipes and tastes that I don’t usually use in baking. Despite the fact that our website is filled with lemon recipes, I somehow never got around to posting these simple lemon cheesecake bars.
It should come as no surprise to you if you have been reading this blog for a long time that a cake mix was used to make these lemon cheesecake bars. Developing recipes that omit steps or simplify life is one of my favorite things to accomplish.
I can still recall what it was like to work more than forty hours a week outside the home, wanting to cook or bake when you got home, but still believing that you wouldn’t be a functioning human if you didn’t go to bed. . I recall trying to bake everything on the weekend in addition to doing laundry, preparing for the next week, grocery shopping, and all the other things that need to get done in life.
I started modifying recipes to make them simpler and take less time after I started living this life.
Ingredients
- Lemon Cake Mix
- Egg
- Vegetable Oil
- Cream Cheese
- Sugar
- Lemon Juice and zest
Recipe Advice
If you don’t have any fresh lemons, you can still use bottled lemon juice, although fresh lemon juice tastes better. Because bottled lemon juice can have a very strong flavor, just start with half the juice and add it carefully.
For this recipe, an 8×8 baking dish was used. If you’d like, you can use a 9×13, but the cake foundation will be much thinner. If you use the larger pan, be sure to check it frequently and modify the baking time.
Remember to preheat your oven to 350 degrees!
Before you place the dough in the baking pan, it is somewhat crumbly.
To make removing the bars from your baking sheet simpler, make sure to line it with parchment paper.
Make sure the parchment extends all the way up the sides. By doing this, you can ensure that the cheesecake mixture does not spill over the parchment paper.
To cut the lemon bars, make sure the cheesecake layer is absolutely cool. This will help in the layer of lemon filling maintaining its shape when serving.
