Kheer is a creamy, rich Indian rice pudding made with milk, sugar, and rice. Perfect for festivals or any special occasion. 

 Ingredients

– 1/4 cup basmati rice – 1-liter full-fat milk – 1/4 cup sugar (adjust to taste) – 4-5 cardamom pods (crushed) – 10-12 almonds (sliced) – 10-12 raisin – A few saffron strands (optional)

Step 1: Wash and soak the rice in water for 20-30 minutes. 

Step 2: In a deep pan, heat milk and bring it to a boil. Add soaked rice and simmer on low heat. 

Step 3: Stir occasionally, cooking the rice in milk until it's soft and the mixture thickens (about 30-40 minutes). 

Step 4: Add sugar and crushed cardamom, stirring to dissolve the sugar. 

Step 5: Add almonds, raisins, and saffron. Cook for another 5-10 minutes. 

Serve warm or chilled. Enjoy your creamy homemade kheer!
